Crispy, bite-sized mini tostadas loaded with your favorite toppings like chicken, beef, or veggies. Perfect for appetizers, snacks, or party platters, these mini tostadas are as fun to eat as they are delicious.

Mini Tostadas Instructions

  1. Prepare the tortillas:
    • Preheat your oven to 400°F (200°C).
    • Cut small corn tortillas into rounds using a cookie cutter or the rim of a glass (about 3 inches in diameter). Alternatively, you can use mini street taco tortillas.
    • Brush both sides of each tortilla round with vegetable oil and place them on a baking sheet.
    • Bake for 5-7 minutes, flipping halfway through, until golden and crispy. Remove from the oven and set aside.
  2. Prepare the fillings (choose one or try a variety!):
    • Chicken Filling: Shred 2 cups cooked chicken (leftover or rotisserie works great). In a skillet, sauté ½ cup diced onions with 2 minced garlic cloves until softened. Add the chicken and season with 1 teaspoon cumin, ½ teaspoon chili powder, salt, and pepper. Stir in ¼ cup salsa or enchilada sauce for extra flavor.
    • Beef Filling: In a skillet, cook 1 lb (450g) ground beef with ½ cup diced onions and 2 minced garlic cloves until the beef is browned and fully cooked. Drain excess fat and season with 1 teaspoon cumin, 1 teaspoon paprika, ½ teaspoon chili powder, salt, and pepper.
    • Vegetarian Filling: Heat 1 can (15 oz) black beans, rinsed and drained, with ½ cup diced onions and 2 minced garlic cloves. Season with 1 teaspoon cumin, ½ teaspoon chili powder, salt, and pepper. Mash slightly to create a chunky filling.
  3. Assemble the mini tostadas:
    • Spread a layer of refried beans or mashed avocado on each crispy tortilla round as a base.
    • Add 1-2 tablespoons of your chosen filling (chicken, beef, or vegetarian).
    • Top with your favorite toppings like shredded lettuce, diced tomatoes, shredded cheese, and sliced jalapeños.
  4. Garnish and serve:
    • Garnish with fresh cilantro, sour cream, and a drizzle of hot sauce or salsa for extra flavor.
    • Serve immediately while the tostadas are still crispy.
